1 package puff pastry, such as Jus-Rol®
2 cups shredded cooked rotisserie chicken
1/3 cup pesto, or to taste
1 cup shredded Swiss cheese
1 egg white, lightly beaten
1 teaspoon poppy seeds

1 Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
2 On a lightly floured surface, roll out puff pastry sheet and cut into 4 to 6 squares (depending on size preference).
3 Place an equal amount of shredded chicken, a spoonful of pesto, and a sprinkle of Swiss cheese diagonally from 1 corner to the opposite corner of each pastry square.
4 Fold the 2 opposite corners over filling so they meet in the middle, forming a neat parcel. Press the 2 corners together to seal. Brush the top of each parcel with egg white for shine, then sprinkle with poppy seeds.
5 Bake in the preheated oven until puff pastry is golden brown and cheese is melted, 15 to 20 minutes. Let cool for 5 minutes before serving.
