1. 1 Combine all of the ingredients and whisk until blended.
2. 2 Season generously with black pepper and adjust to taste by adding more honey if the dressing tastes too tart. This dressing keeps well in the refrigerator, covered, for up to 10 days. (The olive oil tends to solidify in the refrigerator, which is normal. Let the dressing warm to room temperature for 5 minutes or microwave it for about 10 seconds before using.)
