1. 1 Preheat the air fryer to 400°F.
2. 2 In a large bowl, toss the potatoes with the olive oil, garlic powder, Italian seasoning, salt, and several grinds of pepper.
3. 3 Arrange in a single layer in the air fryer basket, leaving a little space between potatoes. Work in batches if necessary.
4. 4 Air fry for 15 to 20 minutes, flipping halfway, or until the potatoes are tender and browned around the edges. Season to taste, garnish with parsley, and serve.
