Ingredients: 6 ounces dried broad or egg noodles; 2 medium eggs; 2 tablespoons heavy cream; 1 tablespoon water; 2 Tablespoons Butter; 4 ounces Spam or Black Forest Ham, cut into small dice; 1/2 white onion, finely diced; Freshly ground black Pepper to taste; 1 tablespoon chopped fresh Parsley, or to taste

6 ounces dried broad or egg noodles
2 medium eggs
2 tablespoons heavy cream
1 tablespoon water
2 Tablespoons Butter
4 ounces Spam or Black Forest Ham, cut into small dice
1/2 white onion, finely diced
Freshly ground black Pepper to taste
1 tablespoon chopped fresh Parsley, or to taste

Instructions

1 Fill a large pot with lightly salted water and bring to a rolling boil. Stir in noodles and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, 7 to 9 minutes. Reserve about an 1/8 cup of the pasta water and set aside.
2 Add eggs, cream, and water to bowl; whisk to combine. Season with black pepper.
3 Heat butter in a large skillet over medium heat. Add Spam or ham and cook until lightly browned, about 3 minutes. Add onion and cook until onion is translucent, about 5 minutes more.
4 Stir cooked noodles into skillet. Pour egg mixture in and stir until eggs are set. Remove to a plate, sprinkle with parsley and enjoy!
