Elderflower & strawberry sangria

Make your own cordial for this cocktail if you get the chance to go out elderflower foraging. English garden meets Spanish beach holiday in this drink

Ingredients

750ml chilled white wine
100ml elderflower cordial
250g strawberries hulled and halved
1 lemon thinly sliced
1 lime thinly sliced
1-2 tbsp caster sugar or to taste
large handful of mint
ice

Instructions

1 Pour the wine into a large pitcher, then add the elderflower cordial and stir to combine.
2 Add the strawberries, lemon and lime slices and the sugar. Stir gently, then lightly press some of the strawberries against the pitcher using the back of a spoon to release their juices.
3 Add the mint, lightly clapping it between your hands first to release its oils. Chill the sangria for at least 1 hr, or until well infused and cold. Serve in ice-filled glasses.
