Potatoes with grüne söße (green sauce) is a popular spring dish in Frankfurt, but with some easy modifications, you can make it anywhere.

1 Add the parsley, chives, sour cream, yogurt, mustard, lemon juice or vinegar, salt, and pepper to a food processor. Blitz to combine the sauce ingredients until the herbs are fine and the sauce is a rich green color. Taste and add more salt, pepper, and lemon juice or vinegar as desired, then transfer to an airtight container and chill in the fridge for at least 1 hour before serving.
2 Once the green sauce has chilled, add the potatoes to a large pot and cover by about 1 inch with cold water. Add the salt. Bring to a boil over medium-high heat, then, once boiling, turn the heat down to medium and cook until the potatoes are fork tender all the way through, about 10 minutes. Drain and let cool slightly.
3 To serve, spoon a generous amount of the chilled grüne soße onto plates with a rim. Top with the warm potatoes and hard-boiled eggs, if using. Serve immediately.
