This quick spinach-artichoke creamy beans recipe is finished under the broiler for a golden, cheesy topping. It’s an easy weeknight meatless main.

1 Arrange an oven rack 4 to 6 inches below the broiler element.
2 Heat a large ovenproof skillet or braiser over medium heat. Once hot, add the oil followed by the garlic. Sauté until fragrant, about 30 seconds. Add the artichokes and spinach and sauté until about half of the spinach is fully wilted, 2 to 3 minutes.
3 Add the drained beans, 1/4 cup of the artichoke brine, and the salt and pepper to the pan. Stir and bring to a simmer. Cook, smashing some of the beans to create a creamy consistency to your liking, until slightly thickened, about 3 minutes, adding more artichoke brine if the pan begins to look dry.
4 Reduce the heat to low and sprinkle 1/2 cup of the parmesan cheese over the top. Stir into the beans until melted. Turn off the heat and sprinkle the remaining 1/2 cup parmesan and all of the mozzarella over the top. Transfer the pan to the broiler and cook until the cheese is bubbly throughout and lightly browned, about 3 minutes. Serve immediately with crusty bread. Love the recipe?
